Only the free run juice is used for this Greco. The must is fermented with great care in temp-controlled stainless steel tanks using only indigenous yeasts. The wine then rests for 6 months to give complexity & structure. The malolactic transformation occurs partially, depending on the natural acidity of the harvest. Before being bottled, the wine is lightly filtered & stored at cellar temperature until it is judged to be ready for the market.
Straw yellow color with delicate golden reflections. On the nose, yellow peach and apricot, flint & orange blossom, with notes of Mediterranean scrubs. When it opens, aromas of lime & lemon emerge. On the palate it is an intense, fresh & savory wine, with a refreshing notes of citrus fruit. The taste persists for a long time, leaving exquisite notes of almond, eucalyptus and lemon zest.

Vinification and ageing: grapes are submitted to a soft pressing of whole bunches to obtain the free-run must, under carefully monitored temperature and using selected native yeasts. The vinification and the ageing on the fine lees for 6 months takes place entirely in stainless steel tanks. Before being bottled, the wine is lightly filtered and kept at cellar temperature until considered ready to be marketed.
Food Pairing
Pair with fish like salmon, seafood but also with fresh cheeses and white meat. It’s perfect as aperitif or for the appetizers
